Asian Chicken PizzaMakes two 14 inch pizzas
Pizza: 2 lbs. your favorite pizza dough (purchased or homemade) 2 ½-3 C Shredded mozzarella cheese 20-25 Red bell pepper strips 20-25 Yellow pepper strips 8 green onions, whites slivered lengthwise and cut into 1 inch pieces, the green parts cut into ½ inch pieces, keeping in separate containers ½ medium red onion sliced into 1/8 inch half rings 2 cups Pre-cooked chicken breast, shredded into medium chunks Sauce: 1/3 Cup Maruso Soy Sauce 3T orange marmalade 1 t minced garlic 1 t minced ginger 3T Water 1 ½ T brown sugar Put pizza stone in middle of a 475 deg. oven. Mix pizza sauce together in small sauce pan on medium heat. Bring to a boil and simmer until thick and syrupy, approximately 5 minutes. Form pizza dough into 14 inch circle. Spread onto pizza peel or rimless cookie sheet which has been sprinkled with ground cornmeal. Spread approximately 3-4 tablespoons of the pizza sauce in a thin layer around the dough, leaving a 1 inch rim. Spread 1 ½ cups of the shredded mozzarella on top. Layer half of the peppers, half of the red onions, half of the slivered green onions. Sprinkle half of the shredded chicken over the vegetables. Transfer the pizza to the oven on the stone; bake until the crust is crisp and golden and the cheese at the center is bubbly, 8-10 minutes. Carefully remove from the oven, slice and garnish with half of the sliced green tops. Repeat with the remaining dough and ingredients. |
