Stir Fried Asparagus with Ginger, Sesame and Soy
Makes 4 Servings
1 1/2 lbs. asparagus, cut into 2” pieces
3 T canola oil
1 T chopped fresh ginger
1 1/2T Maruso Soy Sauce
1/8 t red pepper flakes
2 t toasted sesame oil
1 t sesame seeds
Fill large pot with water. Bring water to boil and par boil asparagus until crisp tender. Remove from boiling water and immediately shock asparagus in ice water bath. Set aside.
In large sauté pan, heat the canola oil. Stir fry the ginger until fragrant but not burnt. Add Maruso Soy Sauce, red pepper flakes and heat through. Remove from heat.
Drain the asparagus and add to the ginger, soy and pepper flakes. Add the sesame oil and sesame seeds. Gentle toss the asparagus in the pan, coating evenly with the sauce. Remove onto platter, serve at room temperature or chill for a refreshingly cool vegetable side.
